Nigerian Rice and Beans is a staple and common meal enjoyed across every region in Nigeria. It is simply delicious and easy to make.

One way to reduce the flatulence or indigestion associated with beans is to cook it with another food. Nigerian Rice and Beans recipe is a good combination.

Below is a well detailed and easy recipe on how to prepare Nigerian Rice and Beans.

Nigerian Rice And Beans Ingredients:
• 4 cups rice
• 2 cups beans
• 1kg meat or fish (optional)
• 6 big plum tomatoes
• 4 medium chili peppers
• 2 medium onions
• 4 seasoning cubes
• 1 tablespoon curry
• 1 teaspoon thyme
• 1 tablespoon ground crayfish
• Salt to taste
• Vegetable or palm oil

How To Prepare Nigerian Rice And Beans:
• Pound or blend the tomatoes, peppers and 1 onion together then set aside. Wash and slice the other onion and set aside for later use.

• Place the meat or fish in a pot, add salt to taste, 2 seasoning cubes, some chopped onions and thyme. Cook until tender. Fry or grill the meat or fish and set aside the stock (water).

• Pick the beans and place in a pot, pour enough water to cover it and set to boil. Once it starts boiling and the beans has soften a bit, add the rice to the pot then cover and continue cooking till both the Rice and Beans are half done.

• Bring it down and pour into a sieve, then rinse the Rice and Beans properly with water and sieve again to drain.

• Heat up the vegetable or palm oil in a medium sized pot, add the remaining chopped onions and fry a bit then add the tomato blend and fry till the water in it dries up.

• Now, add salt to taste, the remaining stock cubes, curry, ground crayfish and stir together. Dilute the stew with enough water (or reserved stock) to cover the Rice and Beans.

• Cover and leave to boil. Once it starts boiling, add the Rice and Beans to the pot and cook on medium heat till the liquid in it dries up.

• Nigerian Rice and Beans can be served with vegetable salad, fried eggs, peppered gizzard or peppered meats. Enjoy!
